I don’t know why but lately I have wanted cinnamon apple everything. Maybe it’s the baby? I’m almost 18 weeks pregnant now, and the force is strong with these cinnamon apple cravings. Or maybe it’s just me – I don’t know.
I’ve been wanting to make muffins for a while – I just think that they are such a handy snack to have around. You can make them pretty much any way you want them, and depending on what you put in them, they are actually good for you. I don’t have a muffin pan yet, so I made these two bite muffins in my epicure “perfect petites” baking tray! Thanks to my best friend who brought this back to me the other day… I shrieked a little with excitement when I saw it, and was already conjuring up idea’s about what I was going to make in it! You know when you think you’ve lost something, and then it appears and it’s the best day ever? It was one of those days! Though, you could totally make these in a mini muffin tray or in a regular muffin tray if you wanted. You could also do what i’ve been doing before my epicure baking tray came back into my life, and just make everything in a donut pan (because who has a donut tray, but not a muffin tray?) Me. That’s who.
So a little bit about these muffins, they are gluten free, vegan, (as is everything I make) and nut free as well! You could probably add nuts to the batter or the topping if you wanted but I opted not to for this recipe. They are small, super easy to make and addictive. I think i’ve already ate half of them. It’s not me I swear, it’s the little human growing inside me! So let’s get on to the recipe!
Two Bite Apple Crumble Muffins
Dry Ingredients
3/4 cup brown rice flour
3/4 cup chickpea flour
1/2 cup gluten free rolled oats
1 tsp baking powder
1 tsp baking soda
1 1/2 tbsp cinnamon
1/2 cup coconut sugar
Wet ingredients:
2 cups chopped or grated apple (I used chopped for this recipe)
1 chia egg (1 tbsp ground chia or flax with 1/4 cup warm water. Let sit for 5-10 minutes til sticky)
1/3 cup water
1/4 cup almond milk
1/4 cup coconut oil
1 tbsp apple cider vinegar
Optional topping (but super delicious and simple so make it!)
1/2 cup chopped apple
1/2 cup gluten free rolled oats
1 tbsp coconut sugar (could substitute maple syrup)
2 tbsp coconut oil
How to make these:
- Preheat the oven to 350 degrees
- Mix all the dry ingredients in a bowl together, and the wet ingredients in a separate bowl.
- Mix together wet and dry ingredients and gentle fold in the apple
- Lightly grease your pan of choice with coconut oil, and spoon in the mixture
- Spoon on some of your optional topping in a generous portion.
- Place muffin tray in the oven for about 30 minutes, or until golden brown and you can stick a toothpick inside without goop getting all over it.
- Let cool on a cooling rack and serve!
Optional topping:
Place all ingredients in a bowl and mix together.
