  1. Preheat the oven the 350 degrees F
  2. Add all the dry ingredients in a bowl and mix thoroughly, and all the wet ingredients in a separate bowl. Whisk them together well, folding in the chocolate chips.
  3. Lightly grease your muffin pan with some coconut oil, and spoon your batter in evenly.
  4. Let bake for 20-30 minutes, until golden brown on the top. They are done when you can stick a toothpick in the middle, and it comes out clean.
  5. Let cool and serve! They are delicious with almond butter!
Recipe Notes

Chia egg: Mix 1 tbsp of ground chia seeds with 1/4 cup of warm water. Let it sit for approximately 10 minutes before adding it to the wet ingredients

Gluten free flour blend: 1/2 cup brown rice flour, 1/2 cup chickpea flour and 1/4 cup arrowroot starch is the blend I use.
