Yea, you read it right – Strawberry Cheesecake Pancakes. Not to toot my own horn or anything, but these are effing amazing.
I whipped them up the other day for The Good Lord, and she thought they were out of this world, so that’s gotta count for something right?
“The Good Lord??” you ask? How on earth did you whip them up for The Good Lord herself, Mel? (Because obviously if there is a physical manifestation of God, she’s a woman).
Well let me tell you the story about my friend, The Good Lord.
So we’re on our way home from my baby shower, and I am exhausted. I think pregnant lady exhaustion is on the same level as children’s exhaustion. Like, take your kid to Wonderland for the entireday in the sun, kind of exhaustion. But after only moderate levels of activity. So we start driving home. There’s Me and my friend Sacheen in the front, and my husband and favourite human Sara in the back seat. The car is packed with baby gifts, and at some point Sacheen say’s, “Hey guys, I’m gonna have to pull over and fix that flap, it’s faced up and I can’t see out the back.”
As he starts to slow down, all of a sudden the flap went down miraculously on it’s own. So I shouted out loud, “OMG! The Good Lord heard your request and put the flap down!” I was genuinely, amazed. Here I am thinking this is some crazy miraculous, serendipitous event.
Everyone in the car started laughing at me.
Like guys, I REALLY thought it plonked down on it’s own. I thought (pretty much out loud), “Hallelujah, we don’t need to stop! The universe made it happen on it’s own! How cool! This is awesome! As if you just said that and it happened! Wow!!” Nope. Turns out it was Sara. Sara was The Good Lord the whole time. She pushed the flap down. She was the miracle maker. So now I refer to her as The Good Lord, and that’s how I came to make pancakes for her Highness, The Good Lord.

Ok so, the pancakes.
One day, The Good Lord tells me she’s coming over after yoga practice, and I’m all like, “Sweet, I’m gonna make you the best pancakes you’ve ever had!” I’d been dreaming up these strawberry cheesecake pancakes for a while and I thought, Today is the day! So I whipped them up, and they were a HIT.
Let me tell you a little bit about the pancakes before we get into the nitty gritty details of the recipe.
First of all – these can pretty much be made into ANY flavour. You like blueberry? Toss in some bluebs instead of strawbs. You like raspberry? Same. I think if you wanted chocolate cheesecake you could seriously just toss in a tbsp of cacao and it would be delicious. I’ve never tested it with chocolate, but Ibet it would be good. If you just want plain cheesecake, just omit the berries! Easy peasy.
Second of all – you can modify the consistency of these pancakes (or any pancakes) by simply adding or omitting the liquid component (which in any pancake recipe can be either water or dairy free milk). If you like your pancakes thicker, add less liquid. If you like them thinner, add a little more liquid. The way I’ve measured out these particular pancakes is on the more liquidy end of the pancake spectrum, so I would NOT exceed this amount of milk or water. If they’re too liquidy, the pancake wont form and you will be sad. And pancakes should make you happy, not sad!

- 1.5 cups all purpose gluten free flour
- 1/2 cup coconut sugar
- 2 tbsp baking powder
- 1 chia egg (1 tbsp ground chia seeds, 1/4 cup warm water)
- 1 cup non-dairy milk or water
- 2 tbsp coconut oil
- 1 tbsp apple cider vinegar
- 2 tbsp apple sauce
- 1/2 cup soaked cashews (see notes for quick soak method)
- 1/2 cup non-dairy milk
- 2 tbsp coconut oil
- 2-3 tbsp maple syrup (depending on how sweet you like it)
- Juice of half a lemon
- 1/2 cup strawberries (fresh or frozen will work fine, though I used fresh) And more for topping!

- For the pancakes place all the dry ingredients in a bowl, and whisk together. Set aside.
- Place all liquid ingredients in a bowl or blender, and mix together. Mix all ingredients together in a bowl or blender. Note* Remember that the thicker the batter, the thicker the pancake, and the thinner the batter the thinner the pancake. To yield a thicker pancake, add a little less liquid as this recipe creates a thinner pancake.
- Heat a non-stick pan over medium heat and line lightly with coconut oil. I use a large, flat, non-stick griddle which works great.
- Scoop approximately 1/4 a cup of batter onto your pan which will yield one pancake. Let them cook, and once you start to see little bubbly holes on the top, it's time to flip them! Leave them for about 5-7 minutes on the second side. You can keep them warm in the oven if you need to while making the sauce, or make the sauce between flips if you're crazy like that!
- Place all ingredients in a blender, and blend on high until a creamy consistency is achieved.
- Drizzle your cheesecake sauce all over your pancakes, top with strawberries and try not to die of deliciousness!
The Quick Soak Method: Boil water, and pour over your cashews. This will allow them to soften up in about 10 minutes or so, rather than soaking for hours!
